HEALTH IN A HURRY -quick n nourishing TAHINI N Carrot sweet potato SOUP RECIPE
A PERFECT SOUP -er FOOD combo!
Pot to bowl 30 mins
1 T Olive oil
1 T Coconut Oil
1 Large onion - chopped (2 cups)
2 Garlic ( Organic ) cloves -finely diced
2 T grated ginger (Optional and additional health ingredient)
1 teaspoon Himalayan Salt
1 teaspoon Tumeric
1/2 teaspoon paprika
1 kg in total carrot and sweet potato -chopped
4 T Tahini
1 or up to 2 Litres Organic Vegetable stock (reserving amount to adjust thickness of soup. First Litre or more to cover ingredients in pot.
6 T pistachio nuts - roughly chopped (to garnish)
Heat oils in large soup pot
Sauté onions 5 mins
Add salt, paprika, Tumeric, Garlic, ginger ( optional )- stir/ cook one min
Add vegetables -toss one min
Add stock to cover ( approx 1- 1 & 1/2 Litres)
Bring to boil, then lower heat to simmer with lid on,until Vegetable is tender
Add Tahini, blend .
Serve soup with pistachio glitter.
Stores 5 days in refrigeration
